The Stollen Seal

Dresden Christstollen® is hand-made by some 130 bakeries and pastry shops in and around Dresden according to traditional recipes. Only stollen which meet the high standards of the statutes of the Stollen Association are allowed to bear the stollen seal as a mark of their top quality and authenticity.

The oval gold seal is a guarantee that a Dresden Christstollen® has been proven to be of constantly high quality. The certificate of quality also provides information about the origins and quality of the traditional Christmas delicacy via a control number above the seal. After buying or being given a stollen, consumers can use this number to track down the stollen baker or pastry maker who made any Dresden Christstollen®. Stollen buyers who would like to know where their stollen comes from can find out from the Stollen Association. The seal also guarantees that the stollen was made by hand in the Dresden area. For the 2012 stollen season the association has had more than 3 million stollen seals produced.


The stollen made by all Dresden stollen bakers and pastry makers is viewed, tested and sampled by a panel during a public testing procedure. After this uncomplicated quality test the Dresden bakers and pastry makers are given ‘their’ stollen seal. Certificates entitle them to label the traditional Dresden delicacy with the golden mark of quality.

In relation to the quantity of flour used, an original Dresden Christstollen® contains at least 50% butter, 65% sultanas, 20% candied peel and 15% sweet and bitter almonds. According to the Stollen Associations statutes, margarine and artificial preservatives and aromas may not be added. A genuine Dresden Christstollen® must contain the following ingredients: wheat flour, yeast, fresh or powdered full-cream milk, granulated sugar, clarified butter, candied peel, sultanas, sweet and bitter almonds or marzipan, lemon zest, table salt, icing sugar, stollen spices and spirits.

Dresden Stollen® protected throughout Europe – the EU quality label.

The EU quality label is given to products and foodstuffs whose origins allow them to be pinned to a specific geographical location or which can definitely be allocated to a region. Original Dresden Christstollen® is a product with a protected geographical indication (PGI). Thus, alongside them stollen seal, the traditional Christmas delicacy also bears the circular blue and yellow European community symbol.

Dresden Christstollen®is listed on the European Database of Origin and Registration (DOOR) as a protected name. This database is maintained and supervised by the European Union.

Apart from Dresden Christstollen® other protected German products include Lübeck marzipan and Black Forest ham. In Germany, geographical indications are also laid down in the German Trademark Act. The term ‘Dresdner Christstollen®’ has been a protected geographical indication since 2010 and is registered as such with the German Patent and Trademark Office.

According to the statutes of the Dresden Stollen Association (Schutzverband Dresdner Stollen), Original Dresden Christstollen® may only be marketed by producers of baked goods in Dresden and a clearly defined surrounding area. Dresdens stollen bakeries and pastry shops must join the Dresden Stollen Association. Dresden Stollen® can be recognized by the stollen seal.
